When my Instant Pot came into my life, everything changed. Meal prep was suddenly easy and stress-free. It was within the realm of possibilities to get a delicious meal on the table in under thirty minutes. And most of that time? Hands off. There are so many gadgets out there for home cooks that it seems like there’re gadgets for every single need that comes up during the course of cooking. Garlic press? What Check. What’s kale and greens stripper? It’s definitely a must. An avocado slicer? There are three. But nothing has changed cooking more than my Instant Pot. And I’m certainly not alone in coming to the conclusion that it’s a convenient one. One of my favorite things about using my Instant Pot is that it takes just a few minutes of hands on prep to turn out a delicious meal. It takes less than an hour to prepare this vibrant, vegetable-filled dish. And when the final result is a beautiful bowl of perfectly-seasoned curry, you’re going to do whatever you can to carve out time for yourself.

Porridge is a classic breakfast, but if you’ve given up on the idea of porridge being a “sexy” breakfast, this recipe will change your mind. Instead of the usual oatmeal, this recipe uses millet and amaranthus. While any two grains will do, it’s noted that grains become a lot more palatable when there’s more in the mix. Variety is the spice of life.

She loves mushrooms so much she makes them into risotto. Risotto is a dish made from Arborio rice cooked with stock and wine. It’s a perfect combination of hearty, almost meaty mushrooms, and luscious, but slightly bitey arborio rice. This recipe includes a little extra nutrition thanks to the addition of baby spinach and frozen peas.

Hero Ingredient: Parmesan is the perfect match for all the creamy components of this risotto.

Instant Pot Lentil Soup from Love & Lemons

Lentil soups are always delicious, but I haven’t met one I didn’t love with all my heart before now. The tried-and true formula relies on pulses for all the meaty textures—without the meat. This recipe takes things one step further by adding a rainbow of beautiful vegetables. Before using your Instant Pot, be sure to take a picture of the inside of the lid so you can remember exactly how it looks after cooking. Don’t worry; every bowl is stunning.
